Preparing Baked Macaroni and Cheese. Preheat oven to 375° degrees. Butter casserole dish and set aside. Bring 3 quarts of water to boil in an 8 quart stock pot. Salt the water to taste. Cook brown rice pasta al dente. Drain and rinse with cold water. In a large bowl mix pasta and cheese sauce. Place mixture in prepared casserole dish. Turn heat to medium then stir constantly until milk comes to a simmer. Turn heat down to low then stir constantly until noodles are tender, adding an additional 1/4 cup milk if noodles have absorbed all the liquid but aren't tender yet. There should be a bit of milk left in the saucepan to create the cheese sauce. Ingredients 10 ounces gluten-free elbow pasta ¼ cup butter (Optional) 1 ¼ teaspoons salt ¾ teaspoon mustard powder 4 cups milk ¼ cup cornstarch 4 cups shredded Cheddar cheese, divided.

I survived on gluten free macaroni and cheese while in Ireland. It somehow became our go-to meal and also turned into the dinner we made after a long day hiking in the mountains.

We had made a conscious decision to stay in places with full kitchens while on holiday. That way, we didn’t have to deal with eating out all the time and worry about what to eat for every meal.

I struggle with eating meat at times (mainly chicken breasts), but I don’t have any problem eating things like deli meat, prosciutto, salami, sausage, etc. I love it all. // So odd I know.

During an extended vacation away from home, 99.9% of the time I get “glutened” at some point. Then I need to come home, slash dairy out of my diet, and recover.

Guys, I may have made history because this time that was not the case. Actually, this was the first time EVER I’ve come home and felt awesome! // Except for the fact that I’ve been waking up at 5 a.m., craving potato chips instead of breakfast food. But that’s another problem entirely.

Ingredients:

  • 4 cups gluten-free penne pasta, cooked (or favorite pasta of choice)
  • 1 cup whole milk (can use dairy-free milk if needed)
  • 3 Tablespoons butter (or dairy-free butter substitute)
  • 1 1/2 cup sharp cheddar cheese, shredded (or dairy-free cheese substitute)
  • 1/2 cup shredded parmesan cheese
  • 5-6 prosciutto slices, roughly chopped
  • Freshly ground black pepper to taste

Directions:

  • 1. In a large saucepan over medium heat add cooked pasta, milk, butter and cheese.
  • 2. Stir until butter and cheese are fully melted. (Apprx 5 minutes)
  • 3. Mix in prosciutto, leave on low heat for another 2-3 minutes.
  • 4. Crush freshly black pepper, and serve immediately.

This easy, cheesy gluten-free mac n’ cheese recipe requires only one pot, so you can spend less time cleaning up and more time enjoying the gorgeous late summer evening.

Ingredients

  • 12 ounces gluten-free pasta, your favorite kind
  • 4 cups broccoli florets
  • ¼ cup butter
  • 3 tablespoons gluten-free all-purpose flour
  • 1⅓ cup low-fat or whole milk
  • 1 teaspoon salt
  • ½ teaspoon garlic powder (optional)
  • ¼ teaspoon black pepper
  • 3 cups grated cheddar cheese

Directions

Bring a large pot of water to a boil and cook pasta according to package directions. When pasta is 3 minutes from being done, throw the broccoli florets into the pot. Drain pasta and broccoli and let sit in the colander while you make the cheese sauce.

Melt the butter in the pot you cooked the pasta in, over medium heat. Once the butter is melted, add the flour and stir until combined. Add the milk, salt, garlic powder and pepper, and cook until sauce has thickened, 3-5 minutes, stirring regularly.
